Carrick Bannockburn Pinot Gris

We make this wine specifically with our customers in mind, knowing that a good Pinot Gris, should be fruity, fresh and a good all-rounder no matter the conversation or situation. So we crush the fruit, then press and ferment it using wild yeast to foster complexity. We choose a combination of old French oak barrels (60%) and a stainless tank for fermentation to give texture and purity to the blend. Finally we leave a little hint of residual sugar to add balance to the palate.

It tastes like Autumn fruit in a glass, with notes of pear and fresh Braeburn apple, balanced by a hint of clove spice. Great with a pear and walnut salad..


We believe that when the elements of a good Pinot Gris come together, it gives a wine a sense of weight and texture to taste, alongside the classic spice, apple and pear notes.  To achieve this we hand-harvest, then whole bunch press the fruit and ferment using wild yeast. Regular stirring of the wine as it ferments and matures, keeps sediment in suspension which further encourages texture development. Finally, neutral French oak barrels were used for fermenting and maturing around 60% of the wine, where it stayed for 6 months.
