Carrick Cairnmuir Terraces EBM Chardonnay

Cairnmuir Vineyard, Bannockburn, Central Otago

The Cairnmuir Terraces EBM Chardonnay is our top Chardonnay and the name refers to the extended time it spends in barrel before bottling - Extended Barrel Maturation. Hand-picked from fruit grown on the top and lower terraces of our Cairnmuir road vineyard. It is a textural wine with a lovely citrus line and unctuous peach toast notes. Think large glass in front of the fire type of wine. Or a wine to impress at a dinner party. We think it tastes great with roast chicken and mushroom risotto.

Origin: Cairnmuir Vineyard, Carrick, Bannockburn, Central Otago
Hand-picked in: March 2018
Additions: Sulphur Dioxide (PMS), Yeast Hulls
Filtration and/or Fining: Coarse filtration, no fining.
Alcohol: 14.0% abv
Bottled: October 2019
Cases: 300 x 6 bottle cases

The EBM is a blend of two different parcels from the Cairnmuir Terraces, the top terrace where we grow Clone 6 and the bottom where we have Mendoza. Amongst the 7 barrels none were new, they were blended after 12 months then returned to barrel for a further 6 months. The juice was fermented in oak with a daily battonage to assist the wild yeast.

Released after at least 1 year of bottle age, the EBM is complex, with an earthy, savoury tone. Well-suited for a further 10 years of cellaring, it has great breadth, body and intensity. Serve slightly chilled. Recommended pairings include roasted white meats, buttery fish or green vegetables.

Generous, intense and age-worthy.
